Cheesy Bean Quesadillas

Quesadillas are my ultimate comfort food, mixing my two loves: Mexican spice and cheese! They're super quick and easy to make, so they're perfect for a quick bite, speedy lunch, or late-night-drunken snack. In fact, at Wahaca, where I work, every morning we can have team quesadillas for breakfast and it's my favourite part of the day!


The process is the same for every quesadilla, you can make em large or small and fill them with barbacoa beef, chilli, chicken, grilled veggies, pulled pork....let your imagination and tastebuds run loose - just don't forget the cheese!


Cheesy Bean Quesadillas

Special equipment needed:

Large frying pan

Masher


Ingredients

1 can Mixed Beans, drained

1 tbsp Chipotle Paste

1 tbsp Tomato Paste

2 Spring Onions, sliced

100g Cheddar (I use Mexican for extra spice)

4 small Tortillas


Cut into triangle and sprinkle with fresh coriander, or dip into guacamole


Method:

  1. Mash together the beans, chipotle paste, tomato paste and spring onions

  2. Add the mix to a frying pan, adding just enough water to cover the mix

  3. Simmer the mix until it becomes thick and luscious. This is your simple refried bean mix

  4. Grate the cheese and spread evenly over the 4 tortillas

  5. Spread the refried beans evenly over the 4 tortillas

  6. Fold each tortilla into a half moon and fry on each side for 1-2 minutes until golden and crispy

and remember, anyone can cook!
