Lime & Coriander Rice

The simplest side in the world. Great to have with chilli - or stuffed inside a burrito! You don't even have to measure out the rice you can just use a small handful per person, making sure you use double this amount of water when cooking.

Lime & Coriander Rice


Serves 4

Prep time: 5 mins

Cook time: 15 min


Special equipment needed:

Sieve


Ingredients

300g Wild Rice

1 tin Black Beans

Handful fresh Coriander (chopped finely)

1 lime (zest & juice)


Method:

  1. Cook rice according to packet instructions

  2. When the rice has 5 minute left, add the tin of bean

  3. Drain all and mix through the lime zest, juice and coriander

and remember, anyone can cook!

(especially with a dish this simple!)
