There are a million different ways you can jazz up a cookie but nothing is simpler and better than the humble chocolate chip. Here's my recipe for the ULTIMATE CHOCOLATE CHIP COOKIES!
Serves 12-16 cookies
Prep time: 10 min
Cook time: 8-10 min
Special equipment needed:
Baking trays & parchment paper
Mixing bowl
Sieve
Ingredients:
125g Butter
100g Light Brown or Demerara Sugar
125g Golden Caster Sugar
225g Self Raising Flour
1 Egg
1 tsp Vanilla Extract
200g Chocolate Chips (use all one flavour or mix it up - you can also use your favourite chocolate bar that you’ve chopped up!)
Method:
Preheat the oven to 180 degrees
Beat in the egg & vanilla
Sift in the flour and mix - you may need to start using your hands at this point!
Mix in the chocolate chips
Separate the mix into equal sized pieces. You can either go rustic and pull off small chunks to ball up or you can roll the dough into a log, using cling film and refrigerate for 45 mins before slicing into perfect circles. The choice is yours!
Bake on lined baking trays for 8-10 mins until the edges just begin to golden and leave to cool and set. You will most likely need to bake in batches of 6-8
Hack: You can put all the mix into one big flan tin or tray to make a huge cookie! You can then decorate it with buttercream to give as a birthday gift (Just like Millie’s!)
